Carter specifically says "The mother is in the classroom," That pretty much leaves it wide open to students, other teachers, random people sitting in on the class. I'm sure they'll find a reasonable way for him to meet the mother.

Who's to say she's a freshman, or even an undergrad? There are plenty of us who went to school in our late 20s/early 30s; and plenty of young professors teaching graduate-level courses. They would never have Ted hitting on 18-year olds. Leave that to Barney

Can't she just not be a student? There are many ways of making her another teacher for example…. and I think he probably won't meet her at class (just like the "she was in that party" thing), she even could have been in that class for that day (one can even assume that was his first day as teacher).
